Place whole almonds on a baking pan and roast at 350°F for 12 minutes. Stir halfway through. Place on wire rack to cool.
Preheat oven to 300°F. While almonds are cooling, stir together 5 cups organic rolled oats, 2/3 cup olive oil, 1/2 cup honey, 1/4 cup light brown sugar, 1 tsp. vanilla, 1/2 tsp. salt, and 3/4 tsp. cinnamon in a large bowl.
Chop almonds and stir into the granola mixture.
Line two baking pans with parchment paper. Evenly divide granola mixture and spread into the pans using a spatula.
Bake for 10 minutes. Remove pans from the oven, stir the granola, and bake for 10 more minutes.
Remove pans again and stir. Bake for an additional 5 minutes if necessary.
Allow pans to cool on wire rack.
When cool, store in airtight container. Serve with milk or yogurt and berries.

Notes
Make yogurt parfaits with this granola! Layer Greek yogurt, homemade granola, and berries in a cup. Drizzle maple syrup on top if using plain Greek yogurt.
