Homemade Granola

This homemade granola is crunchy and nutrient-dense!

Ingredients
  

  • 5 cups organic rolled oats
  • 2/3 cup olive oil
  • 1/2 cup local honey
  • 1/4 cup light brown sugar
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 3/4 tsp. cinnamon
  • 1 cup chopped roasted almonds

Instructions
 

  • Place whole almonds on a baking pan and roast at 350°F for 12 minutes. Stir halfway through. Place on wire rack to cool.
  • Preheat oven to 300°F. While almonds are cooling, stir together 5 cups organic rolled oats, 2/3 cup olive oil, 1/2 cup honey, 1/4 cup light brown sugar, 1 tsp. vanilla, 1/2 tsp. salt, and 3/4 tsp. cinnamon in a large bowl.
  • Chop almonds and stir into the granola mixture.
  • Line two baking pans with parchment paper. Evenly divide granola mixture and spread into the pans using a spatula.
  • Bake for 10 minutes. Remove pans from the oven, stir the granola, and bake for 10 more minutes.
  • Remove pans again and stir. Bake for an additional 5 minutes if necessary.
  • Allow pans to cool on wire rack.
  • When cool, store in airtight container. Serve with milk or yogurt and berries.

Notes

  • Make yogurt parfaits with this granola! Layer Greek yogurt, homemade granola, and berries in a cup. Drizzle maple syrup on top if using plain Greek yogurt.
