Mill einkorn berries in an electric grain mill.
Add fresh milled einkorn flour, salt, baking soda, and protein powder to a mixing bowl and stir.
Melt butter on stovetop or in the microwave.
Place butter in a separate mixing bowl. Cream butter with white sugar and brown sugar.
Add eggs, milk, and vanilla, and mix again.
Slowly add dry ingredients to wet ingredients and mix until just combined. Don't overmix, or dough will become dense and glue-like.
Fold in chocolate chips with a spatula.
Grease or line a 9 x 13 pan with parchment paper, Transfer dough to the pan and smooth out the top with a spatula.
Bake at 350°F for 30 minutes or until done.
Allow to cool completely before cutting into bars.
