Einkorn Chocolate Chip Cookie Bars

These einkorn chocolate chip cookie bars are thick, chewy, and packed with chocolate chips — made simple with fresh milled flour.

Ingredients
  

  • 3 3/4 cup fresh milled einkorn flour Can substitute 3 cups all-purpose flour or soft white wheat fresh milled flour.
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 scoop unflavored protein powder optional
  • 1 cup melted butter Can substitute dairy-free butter or olive oil.
  • 1 cup organic brown sugar
  • 1/2 cup organic white sugar
  • 2 eggs Can substitute an egg replacement.
  • 1/2 cup milk Can substitute dairy-free milk.
  • 1 tsp vanilla
  • 1 1/2 cup chocolate chips

Instructions
 

  • Mill einkorn berries in an electric grain mill.
  • Add fresh milled einkorn flour, salt, baking soda, and protein powder to a mixing bowl and stir.
  • Melt butter on stovetop or in the microwave.
  • Place butter in a separate mixing bowl. Cream butter with white sugar and brown sugar.
  • Add eggs, milk, and vanilla, and mix again.
  • Slowly add dry ingredients to wet ingredients and mix until just combined. Don't overmix, or dough will become dense and glue-like.
  • Fold in chocolate chips with a spatula.
  • Grease or line a 9 x 13 pan with parchment paper, Transfer dough to the pan and smooth out the top with a spatula.
  • Bake at 350°F for 30 minutes or until done.
  • Allow to cool completely before cutting into bars.
