These einkorn chocolate chip cookies bars are the perfect dessert to bring to a summer potluck. This is our favorite chocolate chip cookie batter recipe. Instead of making individual cookies, we spread the batter in a greased 9 x13 pan. These require less baking time than several batches of cookies, so the house doesn’t heat up too much. I actually prefer chocolate chip cookie bars since they’re so soft and gooey on the inside!

- Fresh milled einkorn flour – This is my favorite flour to use in muffins, pancakes, and waffles.
- Baking Soda – I buy baking soda in bulk from Costco.
- Salt – Redmond’s Real Salt is what I use in my home.
- Protein powder (optional) – This unflavored protein powder bumps up the protein in this recipe.
- Melted butter – The fat for this recipe. You can substitute dairy-free butter if needed.
- Organic sugar – I prefer buying organic sugar to avoid glyphosate.
- Organic brown sugar – I also buy this in bulk from Costco.
- Eggs – Hold the batter together. You can substitute Bob’s Red Mill Egg Replacer if needed.
- Milk – You can substitute dairy-free milk if needed.
- Vanilla extract – Vanilla adds so much flavor to baking.
- Chocolate chips – The star of the show! Chocolate chips make these cookie bars gooey and delicious!
How to Make Einkorn Chocolate Chip Cookie Bars
Step 1: Mill einkorn berries in an electric mill.
Step 2: Add einkorn flour to a stainless steel mixing bowl. Stir in sugar, baking soda, salt and unflavored protein powder (optional).
Step 3: Mix together melted butter, white and brown sugar, eggs, milk, and vanilla extract in a separate bowl.
Step 4: Slowly add dry ingredients to wet ingredients, a little at a time. Mix until just combined. Einkorn flour will become dense and glue-like if overmixed.
Step 5: Fold in chocolate chips with a spoon or silicone spatula.
Step 6: Grease a 9 x 13 pan or line with parchment paper. Transfer the dough to the pan. Smooth the top with a spatula.
Step 7: Bake at 350°F for 25 minutes or until done.

Ingredients
- 3 3/4 cup fresh milled einkorn flour Can substitute 3 cups all-purpose flour or soft white wheat fresh milled flour.
- 1 tsp baking soda
- 1 tsp salt
- 1 scoop unflavored protein powder optional
- 1 cup melted butter Can substitute dairy-free butter or olive oil.
- 1 cup organic brown sugar
- 1/2 cup organic white sugar
- 2 eggs Can substitute an egg replacement.
- 1/2 cup milk Can substitute dairy-free milk.
- 1 tsp vanilla
- 1 1/2 cup chocolate chips
Instructions
- Mill einkorn berries in an electric grain mill.
- Add fresh milled einkorn flour, salt, baking soda, and protein powder to a mixing bowl and stir.
- Melt butter on stovetop or in the microwave.
- Place butter in a separate mixing bowl. Cream butter with white sugar and brown sugar.
- Add eggs, milk, and vanilla, and mix again.
- Slowly add dry ingredients to wet ingredients and mix until just combined. Don't overmix, or dough will become dense and glue-like.
- Fold in chocolate chips with a spatula.
- Grease or line a 9 x 13 pan with parchment paper, Transfer dough to the pan and smooth out the top with a spatula.
- Bake at 350°F for 30 minutes or until done.
- Allow to cool completely before cutting into bars.
How to Store and Reheat Einkorn Chocolate Chip Cookie Bars
Original pan with lid – If your 9 x 13 pan has a lid like mine does, you can simply store these cookie bars on the counter for three to five days(if they last that long!). They will stay good for a week, but start to go dry after 5 days.
Airtight Container – Allow chocolate chip cookie bars to cool completely. Cut into bars and store in an airtight container for three to five days.
Freezer Bags – When making ahead of time, store chocolate chip cookie bars in the freezer.

I don’t have einkorn flour. Can I still make these chocolate chip cookie bars?
Of course! You can substitute all-purpose flour or fresh milled soft white wheat flour. Simply use 3 cups of flour for these options.
Can I make these chocolate chip cookie bars ahead of time?
Of course you can! If making more than a day in advance, I would advise sticking them in the freezer to retain freshness.
One of my family members has an egg allergy, can I substitute the egg for something else?
Yes! My husband has an egg white allergy, so I use Bob’s Red Mill Egg Replacer in all my baking. Cookies are very forgiving, so you could also use a flax egg or different egg substitute
One of my family members can’t have dairy, can I substitute with dairy-free butter and milk?
Yes, you can substitute the butter with any dairy-free butter or olive oil. Any dairy-free milk will work in place of the milk. I have tried coconut milk before, and it gave it more of a nutty flavor. But the bars were still delicious!
