Mill einkorn berries in an electric grain mill.
Add einkorn flour to your mixing bowl along with sugar, baking powder, salt, and protein powder (optional).
In a separate mixing bowl, combine milk, eggs, butter, and vanilla.
Make a well in your dry ingredients and pour the wet ingredients in.
You can whisk the mixture or beat on low with your stand mixer until just combined.
Let mixture sit for 15 minutes.
Heat olive oil or avocado oil in your griddle or skillet.
Pour 1/4 cup batter for each pancake.
Let cook on medium low heat until bubbly on one side, then flip and cook the other side. (It ends up taking around 1 minute each side.)
While you finish cooking the batch, keep pancakes warm on a baking sheet in a 200°F oven.
