Einkorn Flour Pancakes

These pancakes made with fresh milled einkorn flour have a slight nutty taste and great flavor!

Ingredients
  

  • 2 1/2 cups fresh milled einkorn flour Reduce the flour to 2 cups if using fresh milled hard white wheat flour or all-purpose flour.
  • 1/4 cup organic cane sugar
  • 1 tbsp aluminum free baking powder
  • 1 tsp salt
  • 1 scoop unflavored protein powder optional
  • 1 1/2 cups milk Can substitute a non-dairy milk.
  • 2 eggs
  • 4 tbsp melted butter
  • 1 tsp vanilla extract

Instructions
 

  • Mill einkorn berries in an electric grain mill.
  • Add einkorn flour to your mixing bowl along with sugar, baking powder, salt, and protein powder (optional).
  • In a separate mixing bowl, combine milk, eggs, butter, and vanilla.
  • Make a well in your dry ingredients and pour the wet ingredients in.
  • You can whisk the mixture or beat on low with your stand mixer until just combined.
  • Let mixture sit for 15 minutes.
  • Heat olive oil or avocado oil in your griddle or skillet.
  • Pour 1/4 cup batter for each pancake.
  • Let cook on medium low heat until bubbly on one side, then flip and cook the other side. (It ends up taking around 1 minute each side.)
  • While you finish cooking the batch, keep pancakes warm on a baking sheet in a 200°F oven.
