Saturday morning pancakes are a tradition at our house. While I love making easy baking sheet pancakes during the week, weekends call for something a little more special. That’s why I started making einkorn flour pancakes.

Ingredients & Substitutions for Einkorn Flour Pancakes
- Fresh milled einkorn flour – The star of the show! I really enjoy einkorn flour in muffins and pancakes.
- Organic sugar – I get organic sugar from Costco for a great price.
- Aluminum-free baking powder – I get this baking powder.
- Salt – I love Redmond’s Real Salt.
- Protein powder (optional) – I like to add this unflavored protein powder to my baked goods for extra protein.
- Milk – I use whole milk for this recipe. You can substitute 2% milk or other dairy free alternatives in this recipe.
- Eggs – These help bind the batter.
- Melted butter – Give the pancakes a buttery flavor.
- Vanilla extract – Another great flavor enhancer.
How to Make Einkorn Flour Pancakes
Step 1: Mill einkorn berries in an electric mill.
Step 2: Add einkorn flour to a stainless steel mixing bowl. Stir in sugar, aluminum-free baking powder, salt and unflavored protein powder (optional).
Step 3: Whisk together milk, eggs, melted butter, and vanilla extract in a separate bowl.
Step 4: Make a well in the dry ingredients bowl, slowly add wet ingredients. Either whisk in or use your stand mixer on the lowest setting.
Step 5: Let batter sit 15 minutes before cooking pancakes. This helps the einkorn flour fully hydrate.
Step 6: Heat olive or avocado oil in a ceramic griddle, ceramic skillet, or cast iron skillet on medium low heat. When the pan is ready, pour in 1/4 cup pancake batter in a circle shape.
Step 7: Allow pancake to cook until bubbly on one side, then flip and cook other side. This takes about a minute per side.
Bonus Tip: Preheat your oven to 200°F. As you finish cooking pancakes, put them on a baking sheet in the oven. This way you can keep all the pancakes warm while you finish cooking the whole batch.

Einkorn Flour Pancakes
Ingredients
- 2 1/2 cups fresh milled einkorn flour Reduce the flour to 2 cups if using fresh milled hard white wheat flour or all-purpose flour.
- 1/4 cup organic cane sugar
- 1 tbsp aluminum free baking powder
- 1 tsp salt
- 1 scoop unflavored protein powder optional
- 1 1/2 cups milk Can substitute a non-dairy milk.
- 2 eggs
- 4 tbsp melted butter
- 1 tsp vanilla extract
Instructions
- Mill einkorn berries in an electric grain mill.
- Add einkorn flour to your mixing bowl along with sugar, baking powder, salt, and protein powder (optional).
- In a separate mixing bowl, combine milk, eggs, butter, and vanilla.
- Make a well in your dry ingredients and pour the wet ingredients in.
- You can whisk the mixture or beat on low with your stand mixer until just combined.
- Let mixture sit for 15 minutes.
- Heat olive oil or avocado oil in your griddle or skillet.
- Pour 1/4 cup batter for each pancake.
- Let cook on medium low heat until bubbly on one side, then flip and cook the other side. (It ends up taking around 1 minute each side.)
- While you finish cooking the batch, keep pancakes warm on a baking sheet in a 200°F oven.

How to Store and Reheat Einkorn Flour Pancakes
Airtight Container in refridgerator – Allow pancakes to cool completely and place in an airtight container. They can be stored for a few days in the refrigerator.
Freezer Bags – I will usually store any leftover pancakes in the freezer. The night before you want to serve them, take the pancakes out of the freezer and set on the counter to thaw.

I don’t have einkorn flour. Can I still make these pancakes?
Of course! You can substitute all-purpose flour, fresh milled white wheat flour, or all-purpose einkorn. Simply use 2 cups of flour for these options.
I don’t have time to flip pancakes. Can I simply bake these in the oven on a baking sheet?
Yes, you can totally bake these pancakes in the oven. Simply line a baking sheet with parchment paper and pour the batter on it. Bake at 425°F for 18 minutes.
Can I make these pancakes ahead of time?
Yes, you can make them in advance for breakfast. If storing for longer than twenty-four hours, I recommend putting these pancakes in the freezer.
