My mom made this hearty old fashioned amish vegetable beef soup recipe every winter. I remember really enjoying this delicious soup as a child.  Now that I have a family of my own, it has become one of my kids’ favorite soups. Since we live in central FL, the weather is hot most of the time. Once the weather cools down slightly, I make this hearty vegetable beef soup on a regular rotation. 

This Amish comfort food is a complete meal in one pot with down-home ingredients.  It is an easy recipe and the ultimate comfort food!

Ingredients for Homemade Vegetable Beef Soup

  • olive oil
  • onions
  • tomato juice
  • ground beef
  • green beans – canned, frozen, or fresh
  • green peas – canned, frozen, or fresh
  • carrots – canned, frozen, or fresh
  • fresh veggies – potatoes 
  • beef broth
  • Worcestershire sauce
  • bay leaf
  • salt 
  • black pepper
  • chili powder

Steps for Making This Amish Vegetable Beef Soup Recipe

Heat a little oil on medium heat in a large pot. Add onions and cook until translucent.

Once onions are translucent, add 46 ounces of tomato juice to the soup pot.

Stir in salt, pepper, chili powder, and Worcestershire sauce.  Rinse eight potatoes well. Peel and chop into small pieces and add to the large pot.

To make this easy amish beef vegetable soup recipe, I like to buy a freezer bag of mixed veggies – carrots and green peas. I will add the entire bag to the pot of soup along with frozen green beans. You could also use fresh vegetables or canned. 

Pour in four cups of beef broth to this hearty hamburger soup or add four cups of cold water along with beef bouillon to the soup pot. Put the lid on and turn the burner to high heat. Let come to a boil, then turn down to low heat to simmer for one to two hours. After dinner, let soup cool down before transferring to an airtight container and storing in the fridge. Leftovers are even better the next day once the flavors have a chance to mingle. Freshly milled bread or homemade cornbread are great sides for this old fashioned vegetable beef soup. 

Tips for Cooking Old-Fashioned Vegetable Beef Soup on Busy Days

On a busy day, you could sauté the onion separately for this healthy stick-to-your-ribs recipe, then dump all the ingredients into a slow cooker. Cook on high for 3-4 hours or low for 5-7 hours. This recipe is great for busy days because it is a main dish soup. You don’t have to worry about making any sides to go with it.

 This Hearty Old-Fashioned Amish Vegetable Beef Soup Recipe is a family favorite! Even though it is full of vegetables, my kids love it and ask me to make it regularly.

Ingredients

  • 2 tablespoons olive oil

  • 1 small onion chopped

  • 46 oz. tomato juice

  • 8 potatoes, peeled and chopped

  • 12 oz. bag of frozen green peas and carrots (can substitute fresh or canned, see recipe notes)

  • 1 cup frozen green beans (can substitute fresh or canned, see recipe notes)

  • 3 teaspoons salt

  • 1 teaspoon pepper

  • 1 teaspoon chili powder

  • 4 cups beef broth (or 4 cups water with beef bouillon)

  • 2 lbs. cooked ground beef

Directions

  • Put 2 tbsp. olive oil in a large pot and turn on medium heat. Sauté onions until translucent.
  • Pour in 46 oz. tomato juice, 3 tsp. salt, 1 tsp. pepper, 1 tsp. chili powder, and stir well.
  • Peel and chop eight potatoes. Add to the soup along with a 12 oz. bag of frozen carrots and peas,1 cup of frozen green beans, and 4 cups of beef broth.
  • Turn heat to medium-high and cover the pot. Let soup come to a low boil.
  • Once soup is at a low boil, turn heat to low. Add the 2 lbs. of ground beef, stir well, cover the pot, and let simmer for 1-2 hours for the flavors to combine.
  • Serve with homemade bread or cornbread.

Notes

  • This Hearty Old-Fashioned Amish Vegetable Beef Soup is very versatile. You can use frozen, canned, or fresh veggies. I prefer to use fresh potatoes and frozen peas, carrots, and green beans to make it easier to throw together. But you can chop up fresh carrots and green beans and add them to the soup. If all you have on hand is canned veggies, you can use those instead as well. I would add less salt if using canned veggies.
