My Breakfast Routine

Admittedly, I am a boring person. For years, I have eaten eggs and some form of bread product for breakfast, and it doesn’t bother me at all. However here in Central Florida, the temperature is extremely hot in the summertime. On some hot summer mornings, I do not feel like eating hot eggs but still want to get some protein in at breakfast. Yogurt parfaits with homemade granola and berries are perfect for this time of year.

Yogurt Parfaits with Homemade Granola

Greek yogurt has 17 grams of protein per serving! I prefer either to make my own yogurt in the Instant Pot or buy plain whole fat Greek yogurt since it has no sugar or artificial flavorings in it. Also, compared to other forms of yogurt, Greek yogurt has way more protein. You can always sweeten it with a dash of maple syrup. Yogurt contains probiotics which are so beneficial for your gut health.

Berries are high in antioxidants which help protect your cells from free radicals. Some of the nutrients they contain are Vitamin C, Manganese, Vitamin K1, Copper, and folate. They also have a lot of fiber, ranging from 7- 14.5 grams per serving. This fiber helps you to digest your food and stay full for longer periods of time. Some say they are one of the healthiest foods on the planet!

Rolled oats are also good for your gut microbes because they contain 10 grams of fiber per serving. They are a great source of potassium and protein. However, I highly recommend you purchase organic oats since conventional oats are heavily sprayed with glyphosate.

When I checked out the organic granola options in the store, I was shocked to see how expensive they were! As a result, I decided to start making granola myself.

Steps for Making Homemade Granola

If you are using almonds, the first thing you need to do is roast the almonds in the oven. Spread the almonds evenly on a cookie sheet and bake at 350°F for 12 minutes. Stir the almonds after 6 minutes of baking time. Allow to cool on a wire rack before chopping.

Gather organic oats, olive oil, local honey, light brown sugar, vanilla, salt, and cinnamon. Add 5 cups of organic oats, 2/3 cup olive oil, ½ cup local honey, ¼ cup light brown sugar, 1 teaspoon vanilla, ½ teaspoon salt, and ¾ teaspoon cinnamon to a large bowl and stir.

Chop your almonds.  I like this food chopper on Amazon. Add chopped almonds to granola mixture and stir again.

Line two baking pans with parchment paper. Spread granola mixture evenly between the two pans with a spatula. Avoid overcrowding the pans so the granola will be baked evenly. 

Bake at 300°F for 10 minutes. Remove pans from the oven and stir granola. Bake for 10 more minutes and stir again. If necessary, bake for 5 more minutes. Take pans out of the oven when granola starts to turn light brown. Don’t overbake, or it will be too crunchy! Take the pans out of the oven and allow them to cool on wire baking racks like these baking racks from Amazon.

Store granola in an airtight container or canister with a lid. Serve with milk or make a parfait with yogurt and berries. If using plain Greek yogurt, add a drizzle of maple syrup for sweetness. Enjoy!

Homemade Granola

This homemade granola is crunchy and nutrient-dense!

Ingredients

  • 5 cups organic rolled oats

  • 2/3 cup olive oil

  • 1/2 cup local honey

  • 1/4 cup light brown sugar

  • 1 tsp. vanilla

  • 1/2 tsp. salt

  • 3/4 tsp. cinnamon

  • 1 cup chopped roasted almonds

Directions

  • Place whole almonds on a baking pan and roast at 350°F for 12 minutes. Stir halfway through. Place on wire rack to cool.
  • Preheat oven to 300°F. While almonds are cooling, stir together 5 cups organic rolled oats, 2/3 cup olive oil, 1/2 cup honey, 1/4 cup light brown sugar, 1 tsp. vanilla, 1/2 tsp. salt, and 3/4 tsp. cinnamon in a large bowl.
  • Chop almonds and stir into the granola mixture.
  • Line two baking pans with parchment paper. Evenly divide granola mixture and spread into the pans using a spatula.
  • Bake for 10 minutes. Remove pans from the oven, stir the granola, and bake for 10 more minutes.
  • Remove pans again and stir. Bake for an additional 5 minutes if necessary.
  • Allow pans to cool on wire rack.
  • When cool, store in airtight container. Serve with milk or yogurt and berries.

Notes

  • Make yogurt parfaits with this granola! Layer Greek yogurt, homemade granola, and berries in a cup. Drizzle maple syrup on top if using plain Greek yogurt.
