Ingredients & Substitutions for Fresh Milled Flour Pumpkin Cake

Pumpkin Cake:

  • Pumpkin puree
  • Organic sugar
  • Melted butter
  • Oil
  • Eggs – You can substitute Bob Red Mill’s Egg Replacer if needed.
  • Fresh milled soft white wheat flour – I highly recommend milling your own flour for all the health benefits. If you aren’t able to do that, you can substitute the same amount of all-purpose flour in this recipe.
  • Baking soda
  • Baking powder
  • Salt – I use sea salt in my baking.
  • Pumpkin pie spice

Cream Cheese Frosting:

  • Cream Cheese
  • Butter
  • Vanilla
  • Powdered Sugar

How to Make Fresh Milled Flour Pumpkin Cake

1: Mill soft white wheat berries in an electric mill.

2:  If desired, place a stainless steel mixing bowl on a kitchen scale and weigh your ingredients instead of using measuring cups. I place both volume and weight measurements for the ingredients in the recipe card.  Add pumpkin puree, sugar, melted butter, oil, and eggs to the mixing bowl. Mix thoroughly.

3: In a separate mixing bowl, add fresh milled soft white wheat flour, baking soda, baking powder, salt, and pumpkin pie spice. Gradually add the dry ingredients to the wet ingredients. Mix after each addition.

4: Pour pumpkin cake batter into a greased 9×13 glass baking dish. Let batter sit for fifteen minutes. Preheat oven to 350°F while you wait.

5: Bake at 350°F for 55 minutes. Let cool for two hours on a wire baking rack

6: Set cream cheese and butter out of the refrigerator for thirty minutes to soften.

7: Whip softened cream cheese, butter, and vanilla together. Gradually add the powdered sugar. Mix after each addition.

8: Top completely cooled cake with cream cheese frosting and serve.
