We love peach season at our house! Peaches are my husband’s favorite fruit, so I buy a lot of them when they are marked down this time of year. Since peaches are my husband’s favorite fruit, obviously peach cobbler is one of his favorite desserts! I created this peach cobbler recipe with fresh milled flour especially for him.

- Butter – This southern-style recipe requires two sticks (one cup) of butter.
- Fresh milled soft white wheat flour – I love using fresh milled soft white wheat flour in all of my non-yeast recipes.
- Salt – I like using this sea salt in my baking.
- Baking powder – Helps the cobbler rise.
- Organic sugar – I buy organic sugar to avoid glyphosate.
- Milk – I use whole milk in this recipe.
- Peaches – The star of the show! I prefer using canned peaches in fruit juice for this recipe. If using fresh or canned peaches in heavy syrup, you’ll need to adjust the amount of sugar you are adding.
- Vanilla extract– The vanilla complements the peach flavor of this recipe.
- Cinnamon – I top this peach cobbler recipe with a sprinkle of cinnamon.
How to Make Peach Cobbler Recipe with Fresh Milled Flour
Step 1: Mill soft white wheat berries in an electric mill.
Step 2: Place one cup of butter in a 9×13 glass baking dish. Preheat oven to 350°F. Place baking dish in oven while it preheats. This way your butter is melted and hot when you are ready to pour the peach cobbler batter in the baking dish.
Step 3: If desired, place stainless steel mixing bowl on a kitchen scale and weigh your ingredients. Simply use measuring cups if you don’t own a kitchen scale. I place both weight and measuring cup amounts for the ingredients in the recipe card. Add the fresh milled flour, salt, baking powder, sugar, milk, and vanilla extract to this bowl.
Step 4: You can mix these ingredients with a whisk until there are no lumps or use a stand mixer.
Step 5: Once butter is melted, take glass baking dish out of the oven and pour the peach cobbler batter evenly over the butter. Do not stir.

Step 5: Immediately spoon the canned peaches right on top of the batter. Do not stir. If desired, sprinkle cinnamon over the top of the cobbler batter.

Step 6: Bake at 350°F for 55-65 minutes or until the crust turns golden brown and the edges bubble and the internal temperature is 200°F.
Step 7: Take the baking dish out of the oven and let cool on a wire baking rack for 10 minutes before digging in. Serve warm with a generous scoop (or two!) of vanilla ice cream.

Ingredients
- 1 cup butter
- 2 cups + 4 tbsp flour 267.6g
- 2 cups organic sugar 436.1g
- 4 tsp baking powder 12.1g
- 1/2 tsp salt 2.2g
- 2 cups milk 447.3g
- 1 tsp vanilla extract 3.7g
- 3-4 15 oz. cans peaches in fruit juice (drained)
- 1 dash cinnamon (optional)
Instructions
- Preheat oven to 350°F. Place glass baking dish in oven with 1 cup of butter to melt.
- While butter is melting, measure out other ingredients. If using a scale, weigh out the flour, sugar, baking powder, salt, milk, and vanilla required in the recipe. Simply use measuring cups if not using a kitchen scale. Add all ingredients to a stainless steel mixing bowl.
- Using a whisk, mix the ingredients until there are no lumps. You could also use a stand mixer for this step.
- Once oven is preheated and butter is melted, remove the glass baking dish from the oven.
- Spread batter evenly in the baking dish, top with 3-4 cans peaches in juice (drained), and sprinkle cinnamon on top if desired.
- Place baking dish back in oven and bake at 350°F for 55-65 minutes. Cobbler is done when top is nicely browned, filling is bubbly, and internal temp is 200°F.
- Allow to cool on a wire baking rack for 10 minutes. Serve warm with vanilla ice cream.

How to Store and Reheat Peach Cobbler Recipe with Fresh Milled Flour
Airtight Container – Allow peach cobbler to cool for at least one hour. Place a lid on the baking dish or store in an airtight container on the counter for twenty-four hours. If you have any left over after twenty-four hours, you can store in the refrigerator for an additional two to three days.
Freezer – If freezing the whole baking dish, you can wrap the baking dish in plastic wrap, then in aluminum foil. You can also divide the cobbler into smaller portions and freeze in freezer safe containers or freezer bags. Thaw cobbler overnight in the refrigerator before you plan to serve to make sure it completely thaws.
Reheating – Bake whole baking dish (or baking sheet with individual portions) at 350°F for 15-20 minutes or until center is warm. For individual servings, you could also microwave each for 30-45 seconds.

Of course! You can substitute all-purpose flour. Simply use 2 cups of flour for this option.
Can I make this peach cobbler with fresh milled flour ahead of time?
Of course you can! If making more than a day in advance, I would advise sticking the whole pan in the freezer to retain freshness. To reheat, bake whole baking dish at 350°F for 15-20 minutes or until center is warm.
