Right now, it is blueberry season in Florida. There are so many U-pick farms near us where we can pick our own blueberries. Once we get the berries home, the question is, “What do we bake first?” These soft einkorn flour blueberry muffins are a great choice.

What is Einkorn Flour?
A man named Norman Borlaug hybridized wheat in the 1950s to make it less susceptible to disease. This allowed American farmers to grow more wheat for the war effort. However this changed the wheat genetically. Now modern wheat has 42 chromosomes and is higher in gluten content than it was before.
Einkorn wheat has only 14 chromosomes and is higher in protein. It also contains a less toxic form of gliadin, which makes it lower in overall gluten. My daughter and husband are both sensitive to gluten, but have tested negative for celiac disease. They can tolerate einkorn flour fine.

Ingredients & Substitutions for Einkorn Flour Blueberry Muffins
- Milk – I use whole milk.
- Olive Oil – This is the fat for this recipe.
- Egg – Eggs help so much with binding your batter when using Einkorn flour.
- Fresh milled einkorn flour – You can substitute fresh milled white wheat flour or all-purpose flour.
- Organic Sugar – This is my preferred sweetener.
- Salt – I like to use sea salt in my baking.
- Baking Powder – Here’s the aluminum-free brand I use!
- Sour Cream (or Plain Yogurt) – This helps the batter to retain moisture.
- Blueberries (Fresh or Frozen) – The star of the show! Use whatever blueberries you have on hand.
How to Make Einkorn Flour Blueberry Muffins
Mill einkorn berries in an electric wheat mill.
Mix einkorn flour, salt, and baking powder in a mixing bowl. Set aside.
In a separate mixing bowl, cream milk, olive oil, and sugar. Add in the egg and sour cream and combine. Slowly add the dry ingredients to the wet ingredients, being careful not to overmix.
Put the blueberries in a separate bowl and sprinkle with flour. This helps them not sink to the bottom of the muffin. Gently fold into the batter.
Line a muffin tin with muffin liners. Fill 2/3 of the way full. Bake at 350°F for 20-25 minutes.

Einkorn Flour Blueberry Muffins
Ingredients
- 3 tbsp milk
- 3 tbsp olive oik
- 3/4 cup organic sugar
- 1 egg
- 1/2 cup sour cream or plain yogurt
- 1 3/4 cup fresh milled einkorn flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1 cup blueberries fresh or frozen
- 1 tsp fresh milled einkorn flour to coat berries
Instructions
- Mill einkorn berries in an electric grain mill.
- Add einkorn flour, salt, and baking powder to a mixing bowl. Stir to combine and set aside.
- Cream milk, olive oil, and sugar in another mixing bowl.
- Add egg and sour cream. Mix.
- Add dry ingredients to wet mixture. Stir in, but do not overmix. Einkorn flour needs to be handled lightly.
- Pour blueberries in separate bowl and sprinkle a little flour on top. Stir flour and blueberries together, then fold blueberries gently into the batter.
- Line muffin tin with liners.
- Using a cookie scoop, fill liners 2/3 of the way full.
- Bake at 350°F for 20-25 minutes or until lightly browned.

How to Store and Reheat Einkorn Flour Blueberry Muffins
Airtight Container – Allow muffins to cool completely and place in an airtight container. They keep fresh for a few days on the counter, if they last that long!
Freezer Bags – I will usually triple the batch when I make these muffins. Half of the muffins will go into an airtight container. I will put the other half into freezer bags to store in the freezer for an easy make-ahead breakfast. The night before you want to serve them, take the bag of muffins out of the freezer and set on the counter to thaw.

I don’t have einkorn flour. Can I still make these blueberry muffins?
Of course! You can substitute all-purpose flour or fresh milled white wheat flour. Simply adjust the milk, oil, and flour measurements. For one batch, you will need 1/3 cup milk, 1/3 cup olive oil, and 1 1/2 cup flour.
I don’t have access to fresh blueberries. Can I make these muffins with frozen blueberries?
Absolutely! Whether you use fresh or frozen blueberries, you will need one cup for this recipe. I highly recommend you pour your berries in a bowl, sprinkle some flour on top, and mix in. The flour helps the blueberries not sink to the bottom of the muffins.
Can I make these muffins ahead of time?
Yes, I meal prep muffins all the time. If prepping for longer than a day ahead of time, I recommend storing these muffins in the freezer.
