My old waffle maker bit the dust a few years back, and I recently bought a new one. I decided to make waffles with fresh milled einkorn flour. These soft and fluffy einkorn waffles are now my family’s favorite breakfast.
I served these einkorn waffles the traditional way with butter and maple syrup, but you could get fancy and serve them with whipped cream and fruit.

Simple and Easy Recipe – These waffles are super simple to make. You don’t even need a mixer. Just simply mix your dry and wet ingredients separately then whisk together.
Flavor – Einkorn flour gives these waffles a slight, nutty taste. They have more depth of flavor than all-purpose flour waffles!
Nutrition – Fresh milled einkorn flour contains fiber, vitamins, minerals, and antioxidants. This bumps up the nutrition in these einkorn waffles. Gluten-sensitive people can often tolerate einkorn because it’s protein structure is different than modern wheat and easier to digest.

Ingredients & Substitutions for Einkorn Waffles
- Fresh milled einkorn flour – This is my favorite flour to use in muffins, pancakes, and waffles.
- Organic sugar – I like buying organic sugar to avoid .
- Aluminum-free baking powder – This is my favorite aluminum-free baking powder.
- Salt – Redmond’s Real Salt is what I use in my home.
- Protein powder (optional) – This unflavored protein powder bumps up the protein in this recipe.
- Milk – This recipe calls for whole milk. You can substitute 2% milk or other dairy-free milks.
- Eggs – These help bind the batter. You can substitute Bob’s Red Mill Egg Replacer if needed.
- Melted butter – Butter makes everything better.
- Vanilla extract – Vanilla adds some flavor.
- Optional chocolate chips or blueberries/strawberries – Some fun ingredients you can add to make these waffles more special.
How to Make Einkorn Waffles
Step 1: Mill einkorn berries in an electric mill.
Step 2: Add einkorn flour to a stainless steel mixing bowl. Stir in sugar, aluminum-free baking powder, salt and unflavored protein powder (optional).
Step 3: Whisk together milk, eggs, melted butter, and vanilla extract in a separate bowl.
Step 4: Make a well in the dry ingredients bowl, slowly add wet ingredients. Add in chocolate chips or fruit if desired. Either stir or use your stand mixer on the lowest setting.
Step 5: Let batter sit 15 minutes before cooking waffles. This helps the einkorn flour fully hydrate.
Step 6: Heat your waffle maker. When the waffle maker is preheated, pour in 3/4 cup waffle batter or whatever amount your waffle maker recommends. I just bought this ceramic waffle maker and love it!
Step 7: Allow waffle to cook until your waffle maker beeps. Remove waffle and set aside while you finish making the rest of the batch.
Bonus Tip: Preheat your oven to 200°F. As you finish cooking waffles, put them on a baking sheet in the oven to keep warm until serving.

Einkorn Waffles
Ingredients
- 2 1/2 cups fresh milled einkorn flour Reduce the flour to 2 cups if using fresh milled soft white wheat or all-purpose flour.
- 1/4 cup organic cane sugar
- 1 tbsp aluminum-free baking powder
- 1 tsp salt
- 1 scoop unflavored protein powder (optional)
- 1 1/2 cups milk Can substitute dairy-free milk. Add 6 tablespoons more if substituting.
- 2 eggs Can substitute Bob's Red Mill Egg Replacer or other egg substitute.
- 4 tbsp melted butter Can substitute olive oil or dairy-free butter.
- 1 tsp vanilla extract
Instructions
- Mill einkorn berries in an electric mill.
- Add einkorn flour to a mixing bowl along with sugar, baking powder, salt, and protein powder (optional).
- In a separate mixing bowl, combine milk, eggs, butter, and vanilla
- Make a well in your dry ingredients and pour the wet ingredients in.
- Either whisk mixture or beat on low speed in a mixer until just combined. Do not overmix! Einkorn flour does not perform well if it is overmixed.
- Let waffle batter sit for 15 minutes.
- Heat up waffle maker.
- Pour 3/4 cup of batter into waffle maker or whatever amount your waffle maker recommends.
- Let cook until waffle maker beeps. Set aside. While you finish cooking the batch, keep waffles warm on a baking sheet in a 200°F oven.
- Serve warm with butter and real maple syrup.

How to Store and Reheat Einkorn Waffles
Airtight Container in refrigerator – Allow waffles to cool completely and place in an airtight container. They will keep for a few days in the refrigerator.
Freezer Bags – I store leftover waffles in the freezer. The night before I want to serve them for breakfast, I set them on the counter to thaw.
FAQS
I don’t have einkorn flour. Can I still make these waffles?
Of course! You can substitute all-purpose flour or fresh milled soft white wheat flour. Simply use 2 cups of flour for these options.
Can I make these waffles ahead of time?
Of course you can! If making more than a day in advance, I would advise sticking them in the freezer to retain freshness.
One of my family members has an egg allergy, can I substitute the egg for something else?
Yes! My husband has an egg white allergy, so I use Bob’s Red Mill Egg Replacer in all my baking. Waffles and pancakes are very forgiving, so you could also use a flax egg or different egg substitute
One of my family members can’t have dairy, can I substitute the butter and milk?
Yes, you can substitute the butter with any dairy-free butter or olive oil. You can also substitute dairy-free milk. I have used coconut milk in this recipe before. Would recommend adding six tablespoons more of dairy-free milk if substituting.
