Every house has the same problem. You buy two bunches of bananas at the grocery store, fully intending to eat them all. Then in a few days, they are too ripe to eat. Thankfully, we have the cure to this problem, Einkorn Banana Muffins.

Nutrition – Home milled einkorn flour contains fiber, vitamins, minerals, and antioxidants. It gives these banana muffins so many nutrients. Einkorn is a great flour for those who are gluten-sensitive since it’s protein structure differs from modern wheat. As a result, it is easier to digest.

Ingredients & Substitutions for Einkorn Banana Muffins
- Butter – This is the fat for this recipe.
- Egg – An egg help so much with binding your batter when using einkorn flour.
- Organic sugar – This is my preferred sweetener.
- Ripe bananas -The star of the show! Use really ripe bananas for the best flavor.
- Fresh milled einkorn flour – You can substitute fresh milled white wheat flour or all-purpose flour, but einkorn flour gives these muffins such a good flavor!
- Baking soda – This helps the banana muffins rise.
- Salt – I like to use Redmond Real Salt in my baking.
- Vanilla – Helps give the recipe flavor
- Unflavored protein powder (optional) – This beef broth protein powder helps boost the protein in the banana muffins.
How to Make Einkorn Banana Muffins
Step 1: Mill einkorn berries and preheat the oven to 350°F
Step 2: Measure einkorn flour into a stainless steel mixing bowl. Stir in baking soda, salt, and unflavored protein powder (optional).
Step 3: In a different mixing bowl, cream butter and sugar. Add the egg and mix.
Step 4: Mash bananas with a potatoes masher. Add to the wet ingredients along with the vanilla extract and mix again.
Step 5: Add the dry ingredients bowl slowly to the wet ingredients. Use your stand mixer on the lowest setting and mix until just combined. Einkorn flour does not like to be overword.
Step 6: Grease a stainless steel muffin tin or line with natural cupcake liners. Fill each liner 2/3 of the way full.
Step 7: Bake for 18-20 minutes or until the internal temperature is 200°F to 205°F.

Einkorn Banana Muffins
Ingredients
- 1/4 cup melted butter
- 1 cup organic sugar
- 1 egg
- 3 ripe bananas
- 1 tsp vanilla extract
- 1 3/4 fresh milled einkorn flour Can substitute 1 1/2 cups of fresh milled soft white wheat flour or all-purpose flour.
- 1 tsp baking soda
- 1 tsp salt
- 1 scoop unflavored protein powder Optional
Instructions
- Mill einkorn berries in an electric wheat mill.
- Add fresh milled einkorn flour, salt, baking soda, and protein powder to a mixing bowl and stir.
- In a separate mixing bowl, cream butter and sugar.
- Add the egg, banana, and vanilla and mix in.
- Slowly add the dry ingredients to the wet ingredients and combine. Do not overmix! Einkorn flour does not like to be overworked.
- Grease a muffin tin or line with cupcake liners. Fill the liners 2/3 of the way full.
- Bake at 350°F for 18-20 minutes.

How to Store and Reheat Einkorn Banana Muffins
Airtight Container – Allow einkorn banana muffins to cool completely and place in an airtight container. They will keep fresh for a few days on the counter, if they last that long!
Freezer Bags – I double the batch when I make these muffins. One batch will go into an airtight container. I will put the other batch into freezer bags to store in the freezer for a make-ahead breakfast. The night before I want to serve them, I will take the bag of muffins out of the freezer and set on the counter to thaw.

I don’t have einkorn flour. Can I still make these banana muffins?
Of course! You can substitute all-purpose flour, fresh milled white wheat flour, or all-purpose einkorn. Simply use 1 1/2 cups for these options.
Can I use frozen bananas for this recipe?
Absolutely! Whenever we have bananas that are too ripe to eat, I stick them in a freezer bag. When I have enough for a double batch of banana muffins, I bake muffins.
Can I make these muffins ahead of time?
Yes, I make large batches of muffins for make-ahead breakfasts. If storing for longer than twenty-four hours, I recommend putting these muffins in the freezer.
