My mom taught me how to bake when I was twelve, so I’ve been baking for a long time. Shortly after I was married, I learned about the health benefits of fresh milled wheat flour. As a result, I purchased an electric grain mill to make my own flour. That mill has been going strong for 17 years, so the investment was well worth it! I modified a recipe from a family friend to create this fresh milled flour bread recipe.

Why You’ll Love Fresh Milled Flour Bread

Simple and Easy Recipe – This bread recipe is very easy to make. It has a few steps, but if you follow them carefully, the bread will turn out beautifully.

Flavor – Fresh milled hard white wheat flour has great flavor! It tastes much better than all-purpose flour.

Nutrition – Fresh milled wheat flour contains many vitamins, minerals, and enzymes.

Ingredients & Substitutions for Fresh Milled Flour Bread

  • Water -You want the water to be warm, but not too hot. The ideal temperature is from 105°F to 115°F.
  • Yeast – I buy active dry yeast in bulk from Amazon and store it in the freezer.
  • Olive Oil – This is the fat for this recipe.
  • Salt – I love to use Redmond’s Real Salt in baked goods.
  • Organic brown sugar – I get organic brown sugar from Costco for a great price.
  • Fresh milled wheat flour -The star of the show! I like to use hard white wheat berries for yeast recipes.
  • Organic all-purpose flour – I buy this in bulk from Costco.

How to Make Fresh Milled Flour Bread

Step 1: Mill hard white wheat berries in an electric mill.

Step 2: Add fresh milled wheat flour to a stainless steel mixing bowl. Stir in warm water, cover, and let sit for thirty minutes. This is the autolyse method which will help the bread’s texture not be crumbly.

Step 3: Add yeast, olive oil, salt, brown sugar, and mix using the paddle attachment on your stand mixer.

Step 4: Gradually stir in the organic all-purpose flour to create a soft dough. Knead for six minutes using the dough hook for your stand mixer or knead by hand.

Step 5: Place dough in greased bowl and cover. Let rise one hour.

Step 6: Grease loaf pan or line with unbleached parchment paper.

Step 7: Roll dough into a loaf shape and place in a glass loaf pan. Cover and let rise another thirty minutes to one hour. Preheat your oven to 350­°F.

Step 8: Bake at 350°F for 30-35 minutes or until lightly browned. Brush the top with melted butter.

Fresh Milled Flour Bread

This is fresh milled flour bread the way it was meant to be made. Whole grain, nutrient-dense, and rich with natural flavor that only freshly milled flour can deliver.

Ingredients
  

  • 1 cup warm water
  • 2 1/4 teaspoons yeast
  • 1 tbsp plus 1 tsp olive oil
  • 1 tsp salt
  • 2 tbsp brown sugar
  • 2 cups fresh milled hard white wheat flour
  • 1 cup all-purpose flour

Instructions
 

  • Combine warm water and fresh milled wheat flour. Let sit thirty minutes. This is a process called autolyse which will help your bread not turn out crumbly.
  • Add yeast, olive oil, salt, brown sugar, and mix using paddle attachment on your stand mixer.
  • Gradually stir in the all-purpose flour to form a soft dough. Knead 6 minutes by hand or with the dough hook for your stand mixer.
  • Place in greased bowl. Cover and let rise one hour.
  • Grease loaf pan or line with parchment paper. Roll dough into a loaf and place in pan. Cover and let rise 30 minutes to one hour.
  • Bake at 350°F for 30 minutes or until lightly browned. Brush top with melted butter.

How to Store and Reheat Fresh Milled Flour Bread

Airtight container or storage bag– Allow bread to cool completely and place in an airtight container or storage bag. Fresh milled flour bread will keep on the counter for about 5 days. You can also use these bread bags to store homemade bread.

Freezer Bags – I will usually double this recipe and store one loaf in the freezer. The night before you want to serve it, take the bread out of the freezer and set on the counter to thaw.

FAQS

I don’t have a grain mill or wheat berries. Can I still make this bread?

Of course! You can substitute all-purpose flour. Simply use 2 1/4 cups of flour for this option.

I don’t have time for the autolyse process. Can I skip it?

Yes, you can skip the autolyse process, but I don’t recommend it. The autolyse process helps the dough to fully hydrate which results in a better texture

Can I make this bread ahead of time?

Yes, you can totally make this bread ahead of time. If storing for longer than twenty-four hours, I recommend putting this bread in the freezer.

    Hi Kimberly! I am leaving a 5 star rating at this time for the information in your article. I haven’t tried your recipe yet. I feel like a late comer to the party BUT I did finally arrive. I am a 71 year old female. Quite a few serious medical conditions. Rehabbing my diet and lifestyle again. To live as long as I can. And be as healthy and active as I can. I just recently became obsessed with baking bread. And FMF. I bought a Mockmill 200 mill that I used to bake my first loaf of bread. Half Hard White WW and half Kamut. The bread was baked in a Dutch Oven so it is a crusty artisan style bread, which I love. Although the crumb isn’t really dense the bread did not have much in the way of oven spring. And I can see I will have to try different grains. The FMF definitely flavors the bread without a lot of ingredients. But I’m not sure I like the flavor of these two grains together. I am anxious to try your recipe today. Question? All of the Vitamins mentioned as benefits are what my body needs. Besides the fact that I am still trying to reach my goal weight(lost 100lbs to date for medical benefits) I have lost my appetite. How much bread should be eaten daily to get the daily vitamins?

      Hello Kim! Hope you enjoyed the bread recipe. I am not sure how many slices of bread should be eaten to get daily vitamins. Believe you would need all the food groups to meet the daily requirements. But I can give you an approximate micronutrients for one slice of this bread recipe: Iron: ~1.4–1.8 mg, Magnesium: ~40–50 mg, Phosphorus: ~110–140 mg, Zinc: ~0.5–0.8 mg, Selenium: ~8–12 mcg (micrograms), B1 (thiamine): ~0.2–0.25 mg, B3 (niacin): ~2–3 mg, Folate: ~20–35 mcg (micrograms).

    I was too excited to try this recipe and substituted what I had on hand. I used 2 cups of einkorn flour with 1 cup of white whole wheat. While the bread came out a bit more dense (as can be expected with my substitutions), I was genuinely surprised at the amazing flavor (and pleasant texture). The autolyse step seemed really to help with these finicky flours! My kids devoured the loaf in one evening. Excited to follow your journey with these healthier grains.
